During ancient times, bottarga was considered an important supply of food. Just as all eggs, bottarga contains a high energetic value being rich in nutritional elements such as proteins and lipids. In spite of this, limited consumption is not as fattening as some may think.
What’s more, several studies performed by the Biology Department at the University of Cagliari show that mullet roe bottarga is a product rich in Omega³ therefore rich in “good cholesterol”.
