The term botargo derives from the Arabic “butarkhah”, literally “fish egg inside its sack” (Makrizi 1400 A.C.) that itself derives from the Coptic “outarakhon”. The Egyptians, starting in 3000 B.C. produced botargo from eggs of different fish species. Later on, Phoenicians, Greeks and Romans used transform the roe of fish in botargo. It was however first the Arabs, and later the Normans, who amplified the production and the commerce of botargo in the entire Mediterranean basin.
