  • During the fishing season grey mullets are captured that vary in dimension and therefore in weight. Their size and weight also determine the size of their roe. Usually, at least 20% of the entire production is made up of roe that weigh less than 100 grams.
    In addition, during the process of removing the ovarian sack from the fish, the ovarian membrane is often damaged. Ground bottarga is nothing more than the transformation of these different types of roe, that in quality and flavour are the same as those which become whole bottarga.
